In order for cattle to be quality (predicted palatability) and yield (%) graded, carcasses are "ribbed," or cut, between the 12th and 13th ribs. Grading can be done by USDA on a paid-for basis. Here, we grade them for class purposes only and do not assign "official" USDA grades.
