The Spring 2011 semester is over on the Penn State campus. We process and slaughter primarily when class is in session and use the summer to plan for the following semester’s classes and Extension programs, fix a few things that need fixing. That said, we will slaughter a few animals (for Extension programs) and we will be making various products (for research purposes). Research products are usually made with purchased meat since nearly all that we process from Penn State’s animals are used in class and sold out our front door. Some new equipment should also arrive this summer. There should be no shortage of photos, though. There’s always something going on at our slaughterhouse and on our farms.
