Pelt removal is nearly complete. Note the hand holding the pelt away from the carcass. When removing the hide fo cattle or sheep, typically one hand is the "dirty hand" used to hold the hide away from the newly exposed carcass surface, and the "clean hand" bears the knife that does the cutting. Or, in the case of sheep, the hand that does the separation.
