This is the carcass of a farmed deer we purchased for Venison 101 (it is not the same deer pictured previously for the hands-on field dressing demonstration). Participants watched intently as options for venison butchery were demonstrated. After that, participants practiced those butchering practices on veal carcasses. All of the meat used in the workshop will be sold or donated to shelters or food banks.
